Beef Fajitas in the Oven in Foil

These steak fajita foil packets can be made in the oven or on the grill and are an easy dinner with little clean up so you can fiesta any night, not just on Cinco De Mayo!

Happy Monday friends!  For those of you who are wondering I did complete my one-weekend goal this weekend, I got my electronic picture frame set up that I received for Christmas.  Better late than never!  Next weekend's goal?  These delicious fajitas + margaritas because it's Cinco De Mayo! One goal per weekend, just one goal!

Apparently, I love holidays where countries celebrate their independence, my country or not.  My favorite holiday?  My birthday.  Narristic?  Maybe.  Or just a celebration of making it another year in this crazy, beautiful, messed up life we all live.  Living is hard, be proud and thankful for every day!

My second favorite holiday?  Fourth of July, partially because of the proximity to my birthday, but mostly because I love fireworks, country music, and I truly am grateful to live in this country.

Cinco De Mayo takes a close third to my favorite holiday because it gives me a chance to eat my favorite kind of food, Mexican Food and drink my favorite alcoholic beverage, margaritas.  But, just because it's a holiday does not mean that I want to do a bunch of dishes, you feel me?  That's where these foil packets come in!

How To Make Steak Fajita Foil Packets

First, you chop your veggies and toss them with a little bit of oil and garlic salt.

Then combine your steak fajita seasonings into a "dry rub" and toss with strips of steak.  We used Tri-Tip because that is what we had at the time in the freezer from Butcher Box, but, flank steak would also be a nice choice.

Now you build your foil packets!

For the grill, you'll usetwo sheets of foil.  You'll fold the four sides onto each other so that the foil lays flat.  Then, flip it over seam side down, place on the second sheet of foil and do the same thing.  So the first foil seam will be the opposite of the second one. That way you can flip the foil packet on the grill so that both sides get a nice little char.

For the oven, you'll make "steamer" packets.  You can see my Sausage & Veggie foil packet recipe post for a tutorial on how to build steamer packets!

Once they are done, top them with avocado, guac, cilantro, green onion, lime wedges, sour cream or anything else you want!  Don't forget the tortillas! Our favorite our Siete Cassava Flour tortillas but you could do corn or flour as well!

Steak Fajita Foil Packet Dinner

These steak fajita foil packets can be made in the oven or on the grill and are an easy dinner with little clean up so you can fiesta any night, not just on Cinco De Mayo!

Cook Time 20 mins

Total Time 30 mins

Course: Dinner

Calories: 344 kcal

  • Preheat oven or grill to 450F

  • Combine all seasonings together to create a dry rub.  Cut steak into strips and combine steak with dry rub in a bag so that each piece gets fully coated.

  • Cut onions and bell peppers into slices, combine with avocado oil and garlic salt.

  • Cut 6 pieces (grill) or 3 pieces (oven) of 18 x 18 inch heavy duty aluminum foil.

  • Split veggies and meat among 3 pieces of foil evenly.

To cook in oven:

  • Place steamer packets on a cookie sheet in the oven. Bake for 30-35 minutes or until veggies are tender. Turn the oven up to broil. Open the steamer packets (BE CAREFUL USE TONGS THE HOT STEAM WILL RELEASE) and broil for 5-7 minutes or until they have a nice char on the top.  (See photo tutorial for steamer packets in this post)

To grill:

  • Cook foil packets for 15 minutes on each side. Remove from the grill and let cool until they can be handled without injury (or use tongs) before unwrapping.

  • For medium- well steak - reduce cooking time by 5 minutes
  • For medium steak - reduce cooking time by 10 minutes
  • For medium rare - reduce cooking time by 15 minutes
